    I omitted onion/garlic just because didn't have time. Made beer braised short ribs at same time and put polenta in for the last 40 min. of cooking time. Love it that you can mostly just forget about it. Came out creamy, smooth and wonderful

    I didn't read the reviews till after we'd eaten this polenta, but I was licking the spoon when I took it out of the oven to stir it (cleaned the spoon each time! and found it salty just from the broth, so I never added any salt at all. It was delicious.

    I enjoyed this polenta. The only change I made was to use half chicken stock and half vegetable stock. I served it with a tomato chutney. Delicious!

    This is great I make it often. You can add other vegetables, or herbs to it if you want, or switch up what kind of cheese you use. One thing make sure to use low sodium or homemade broth otherwise it comes out way to salty, you can also use half milk to to lower the salt even more. I usually add an extra cup of milk or broth to give it an even smoother and creamier texture.

    I read previous reviews and cut the salt by half. I used vegetable stock instead of chicken and it turned out quite tasty. This made two meals for us... the first right out of the oven with kale pesto swirled into it and toasted walnuts. Yummy!! We put the leftover (while warm into a sealed leftover container to chill. It comes out in a loaf that is easy to slice and manage with no waste. We sauteed the leftover and served it with red snapper that was steamed in a sauce of fresh tomato, caper, onion, and garlic. Fabulous! Next time I am going to omit the parmesan and try goat cheese and sauteed spinach.

    Fantastic recipe! I used one large shallot and a small yellow onion b/c I had no purple onion on hand. I only used a 1/2 tsp salt and it was perfect. I'd never made homemade polenta before this, but I can say it beats the packaged kind by a landslide.

    I topped it with a simple tomato, garlic, & basil sauce. Could not be better.

    I made this in my bean pot using the microwave & it's delicious!! A little thin though, I will cook it a little longer next time. Very smooth though, I've botched polenta before & it was extremely grainy.
