I had never cooked scallops but I love them so much. After watching Good Eats I decided to make them because they look so easy. Not only is it easy... They are so good. I don't like ordering scallops at the "high dollar" restaurants because they don't cook them enough for me. I was able to cook them to my taste and that works for me!!!

This is the simplest, tastiest scallop recipe ever, and it takes no time at all. It is impressive enough for an elegant dinner, but easy enough for a weeknight meal when you have minimal prep time.

I deglazed the pan with white wine and chicken broth, added parsley, 1 garlic clove minced, baby portabella mushrooms & whipping cream. I added the scallops back to the sauce and simmered for a few minutes. I served it over vermicelli with a side of stir fried asparagus. Yummy!!!

We had these for New Year's Eve with Alton's mushroom risotto. Result: Perfectly cooked and seasoned scallops! We were in heaven!!
