    I made this recipe according to Alton's instructions and these were the best, most tender, and tastefull pork chops I have ever had. At first I thought the amount of pepper would be to strong but these pork chops become infused with the mild side of pepper.

    This is excellent! I purchased regular, thick cut pork chops and used Kosher salt for the brine. I didn't salt the pork again and also used crasins which were fantastic! What a great meal!

    I did not buy "infused pork", I used Kosher salt and went a little shy measuring it, I did not salt the pork after brining it, and the whole dish was still too salty. The pork chops were actually okay, but I added carrots and the carrots, onions and apples were super salty, almost inedible. I may try again with way less salt in the brine, and pork chop cutlets instead of on the bone because I did not like the texture.

    Wish I had read reviews before I made this dish. Should have paid more attention to the salt called for - would use 1/2 the amount for the brine and not salt again before sauteing. Also only used 1/2 peppercorns called for. Thanks to the reviewers for suggesting other fruits and/or beggies to put under the chops, baby carrots, craisins, apricots, etc. I would definitely make these again.

    I made this recipe, and after reading some of the reviews and taking into consideration you can add salt later, used the low sodium broth, etc. As the dish was finishing I noticed quite a bit of liquid in the crock pot. What to do? We love corn bread so I was about to make muffins but decided I'd try it on polenta instead. Made the polenta, then put it in a loaf pan to cool, cut in thick slices then served the dish over the polenta. It was fantastic. Chops were so tender I had a difficult time getting them out of the crock pot, but that broth soaking into the polenta was absolutely delicious. My husband just raved and he and I both decided IT'S A KEEPER.

    I saw this recipe on tv the other night and decided to try it. After reading all of the reviews, I opted for low sodium broths to cut down the salt. In the show, Alton does NOT salt the chops again after brining, so I did not salt mine. Also, there is a BIG difference between kosher and table salt, so follow the directions to the letter or change the measurements accordingly. The chops turned out fantastic! I urge anyone who has tried this recipe and didn't like it, to give it another shot- following user tips.

    Recipe was a hit! I did agree with other reviewers that it was a bit salty, but might be my personal taste. I did not salt the pork before sauteing, but it still was a bit on the salty side. Would definitely make again but would make sure that I use reduced sodium chicken broth.

    I'm really not sure why people think this is too salty? I follow this recipe to the letter (except maybe a little more thyme because I love it and it is the best.

    This recipe is definitely GOOD EATS!

    I made this recipe with a center cut boneless pork roast (2+ lbs. The family loved it! I served it with mashed potatoes, to soak up all the juice. I would definitely do it again, as written.
