Great recipe!! The flavors are tremendous. Goes great with garlic mashed potatoes & use the sauce to make gravy.

I don't give out 5 stars easily, but this was one of the best pork dishes I have ever made. I used pork loin cutlets. It reminded us of wild boar. One caveat though, halve the pepper -- unless you like your food very peppery (even my pepper loving husband thought it was a little much. I did not have problems with saltiness, as I halved the amount of kosher salt (if using sea or table salt halve again, omitted the second sprinkling of salt, and cooked it in low sodium broth. Use a splatter screen for frying the meat. This was great over rice. Putting cabbage in with it seems like it would match really well.

I'm not a big fan of pork chops because they are always dry. This receipe is THE ONLY way I'll fix chops now. Excellent flavor, excellent moistness, outstanding meal. I serve with butternut squash meddalions, and a good merlot.

This dish was EXCELENT! It was a little time consuming. A bit more than I usually go for but boy was it worth it. I took another users advice and only used a 1/4 of a cup of salt in the brine but still let it sit overnight (about 11 hours and the flavor came out just great. I'm an avid Good Eats viewer and if you are too, this dish won't disapoint!

This was so delicious and would have received 5 stars if it were a little less salty. I agree with the other reviewer who said they would use half the salt. Otherwise, it was great! The meat fell off the bone and was incredibly tender. Will definitely make this again.

Great recipe! Easy to follow and make. My only suggestion would be to cut the kosher salt amounts in half - at least. It was very very salty.

These may not be the best pork chops ever (though they're awfully close to it but they are undoubtedly the best thing I've ever used my crockpot for. AB's method actually results in a really flavorful dish. I'll make this one again -- and soon. Thanks, AB.

These were very moist, tasty and easy to prepare. I'm always looking for recipes for chops that keep them from drying out--the brining works like a charm. Husband thought these were among the best we've ever made. Thanks again Alton!

My husband and I fixed this for dinner tonight, and I have to say that it is the best thing that has ever come out of my crockpot! Usually when we cook in the crockpot, everything that was in it comes out with the same flavor, but this was different! You could taste the pepper, the sweet, the apple...WE LOVED IT!
