    Very easy, manageable recipe with room for experiment. I decided I wanted to do something other than BBQ ribs, so I gave this a whirl. Ribs were amazingly tender, fall off the bone tender, and the pepper was dominating, but not overwhelming. I will definitely try this for other meals (lamb chops would be good. Fresh apples also worked very well, as I didn't have dried on hand. Delicious.

    The pork chops were fine, but make sure and put the amt of salt it says in the recipe on the pork chops. We thought it was too little and added more and it ended up having way too much salt. Overall they're OK--nothing I would make again.

    My wife and I loved these pork chops without a variation to the recipe. I would guess that the reviews that complain about saltiness came from people who have a much more acute awareness of salty taste. If you know you are sensitive to salt, try cutting back as suggested in other reviews before you condemn this method. For us, this is the best pork chop recipe we've ever tried. It will be made again in our house! Thank you, Alton.

    Simply fabulous. One of my favorite meals.

    I suspect the "too salty" comments result from using 1/2 cup of 'regular' table salt instead of kosher salt.

    Kosher salt has larger grains than ordinary table salt and as such must be measured differently.

    Because the grains in Kosher salt are larger than that of table salt, it occupies more space but is equal in weight.

    For this reason, it requires twice the kosher salt to equal the same weight of table salt.

    To make it real simple.. use the following conversions:

    1/2 cup KOSHER salt = 1/4 cup table salt

    I was a little reluctant to make this because of all the salty comments, but I'm so glad I did! I only used 1/2 the kosher salt, but that was only because that's all I had. Next time I will use more. The chops were not salty at all! The flavors combine in the slow cooker to make a great sauce. I served it with roasted garlic mashed potatoes, and a great succotash recipe I have. Thanks for a great dinner!!! Don't be afraid of reviews about the salty taste; it just wasn't there.

    I made this pork recipe last night, and loved it so much, we couldn't get enough! After reading other reviews of it I did change a few things. I used regular salt, but I only used 1/4 cup in the brine, and I did not salt the chops before browning them. I also used all natural pork chops so they wouldn't be salty, and I used low sodium chicken stock. Also when I added the chicken stock to the pan I used 2 cups instead of 1.5... My gravy was still thick and delicious, the pork fell off the bone and melted in your mouth. I definitely be bringing this recipe into my regular repertoire. I highly suggest making mashed potatoes with this dish, it really soaks up that delicious sauce! Thanks Alton!

    I am making this tomorrow for the second time, the chops just fall off the bone !! I place it in the slow cooker and let the armoma drift throughout the house, yum-o !! Alton rocks. Great w/ a side of sweet potatoes.

    This recipe was originally a little too peppery for the kids. I will probably reduce the amount of pepper in the future. We had lots of leftovers and put the pork on toasted bread today. It was really good. The flavors were much better the second day.

    If you fear making pork chops because they are so easy to dry out then this recipe is a must! They are so tender and delicous! You are amazing Alton!

    We've made this twice now, and we just adore it. To save a little extra money, I used country-style ribs instead of chops, and shredded the meat off the bone when it was tender. Stir the meat back into the onions and presto! Peppery and delicious.
