    Excellent salad. The dressing was wonderful, though it didn't make as much as I would have thought. I also added feta and walnuts to the salad. My husband and I loved it.

    My first like for my 3rd try on an Alton recipe.(And I really like Alton I give it a 5! Very tasty with healthy ingredients(ok, a diet of bacon fat isn't the healthiest. But the dressing really took the strong taste of spinach away. It's great to have another choice besides a red leaf salad or the work of a chopped salad

    i really love how it was done. So mouth-watering!And FYI, I am nuts about food and always bake and cook every chance that I get! Every Sunday is the ideal day for baking and cooking such. I really made sure that it is nutritious and even mix herbs with it for a unique tang! Make sure to log on at Gourmandia for more unique recipes that can really leave you riveting!

    What can I say about this? Alton you rock! This was fabulous! It reminded me of those great spinach salads I used to get in the best restaurants in town! I tried it initially exactly as per your recipe, and loved it. However I make it often now since I can toss it together quickly. I now omit the hard boiled eggs... but I have added toasted pine nuts to the recipe, and it it wonderful!

    Hint: We always save our bacon grease into a corning ware dish (and keep in the fridge, we strain it through a "Basket-style Gold Tone Permanent Filter" to get rid of all the browned bits.

    I love this recipe. I've tried alternative versions, and here is the latest: For the dressing I added a little bit of honey along with a bit of brown sugar (minus the white sugar altogether and tossed it with the spinach, red onion, bacon, walnuts, golden raisins and goat cheese. Left out the egg this time. Fantastic!

    I actually just used the dressing part of this (and the spinach, of course. I substituted white wine vinegar for red wine, though. Instead of the egg, onion and 'shrooms, I did goat cheese, walnuts, and dried cranberries. OMG! So good! Will be making this again and again!
