Delicious. My husband is not a salad eater, but he enjoyed this one. I was concerned about not having enough dressing, so I tripled most of the ingredients: Instead of 1 Tablespoon of red wine vinegar, I used 3 Tablespoons of Pompeian Pomegranate Red Wine Vinegar, instead of 3 teaspoons of sugar, I reduced it to 2 ¼ teaspoons, and instead of 1½ teaspoon of mustard, I increased it to 2 ½ teaspoons of grey poupon. I still used eight slices of bacon, which rendered enough fat for the recipe, but I guess that will depend on the bacon you use. Instead of 4 large white mushrooms, I used 3 large portabella's thinly sliced (the only mushrooms I had on hand. Everything else on the recipe remained the same. However, the next time I try this recipe (and it will be soon, I will try adding 1/8 teaspoon of finely minced garlic for additional flavor.

wasn't my favorite spinach salad that I've eaten. It was a very strong vinager dressing, although, once I tossed the bacon in, flavors leveled out to be tasty. I'll keep this recipe in my collection.

My whole family loved it! I didn't have mushrooms at all, but added mandarin oranges. I found the dressing as written to be a little too tangy for my taste so I needed to add sweetness. The oranges worked great! I did feel a little guilty about the bacon grease, so I'm going to try using less and adding olive oil next time.

We make this all the time. I like to saute the onions at the end of cooking the bacon and then make the dressing in the same pan. Highly recommended.

I couldn't find the bottled stuff today so I checked online and found this. I had pancetta instead of bacon which yielded less fat so I top it off with a little olive oil. I would like to think this lightened it up a bit, but I think it just made me feel better about the bacon fat. Great recipe, tasty and easy. Thanks

This recipe was ridiculously tasty! Very easy to make and goes together fast and the flavor is incredible. Great way to dress up a spinach salad...the only thing I changed was to sautee the onions and mushrooms in the leftover bits of dressing in the pan to soften them and give them the flavor of the dressing...it tasted fabulous!
