    My husband loves warm bacon dressing over spinach, and this one is as good as what we get in any restaurant. Great flavors. We will make this again and again!

    this salad was delicious!! My husband and I had it for dinner last night and he loved it. I used turkey bacon since that's what I had, I did add a little bit of olive oil to have some "grease" for the dressing. Also, I didn't have dijon mustard so I just used spicy brown.
    Whoever says that this salad is not flavorful has obviously done something wrong or is just plain a bad cook =D

    Found the reviews very interesting. Why the hugh range of ratings? I thought this was the perfect Wilted Spinach salad. My kids (34 and 35 went back for THIRDS. My bride (usually very picky also loved it. Maybe they were all starving?? Very easy to make. Describing how to boil the eggs was bizarro. [Today, I'll try to make the eggs in my rice cooker and see if that works for automatic "turn off." Just for kicks. This is what retired men do!!] I also threw into the salad some tomatoes that were ready to go moldy (LOL. Doubled up on the sugar and bacon fat and vinegar. Just too too easy to make not to try once. Cheerio!

    Saw this recipe & realized that I hadn't had this type of salad since I was a kid. Made it this evening for dinner & it was great. It's a definite "do over" at our house.

    I grew up eating spinach salads just like this...my mom made them all the time. All the ingredients are the same EXCEPT for the dressing. Which, I gotta say, is pretty important. The dressing is just meeeh.

    I couldn't get a hold of my mom for her dressing recipe but I'm wishing I would have winged it...if I remember correctly, it has fat (bacon or some kind of oil, ketchup (I know it sounds weird, just do it, honey, red wine vinegar, worchestershire sauce and salt. This dressing has WAAAAAY more flavor. Sorry, Alton, I love you, but I guess you can't be perfect all the time.

    My husband loved it!! I didn't make the whole salad, but made the dressing. I cut some of the fat, by using turkey bacon, and only using ham fat from a broth. It was great!

    I love this salad it is very light..when your not in the mood for starchy stuff..I do add a teaspoon of honey and double the recipe for the dressing..the honey thickens it a bit..also instead of dijon mustard mykids like the goldens spicy brown mustard..great way to get them to eat spinach..thanks alton

    This recipe did not turn our well at all! I had to add an additional teaspoon of sugar to dressing to even eat it. I might try this recipe again using more flavorful/expensive bacon to see if I can improve. Alton's recipes are usually great but this one might be a dud. I'll have to repeat the experiment!

    PS. Hey Alton, love you and your show but we all don't have scales in our kitchens so please use alternate measure methods.

    Great Salad ! Excellent comination of flavours ! This recipe is a keeper.

    Added some tomatoes to salad and teaspoon of liquid honey to dressing.

    Sauteed canned mushrooms and added to dressing mixture because I did'nt

    have fresh mushrooms.
