Very good salad, the dressing is to die for! I used a cabernet vinegar instead of the plain red wine vinegar and it was wonderful. I reduced mine a little and added some extra sugar to sweeten it up, not sure if it was the vinegar I used or just my taste.

Healthy salad.
But I wouldn't use sugar and bacon.

This was so amazingly delicious. I can't believe my husband ate spinach that didn't come out of the can This salad is so elegant, I served it with a bourbon beef tenderloin, recipe courtesty of Paula Dean. Both complimented each other.

We added a little extra sugar and used peppercorn bacon and it tasted very much like our favorite restaurants dressing. Our guests were impressed.

My brother-in-law gave us this recipe awhile ago and we never got around to making it until yesterday. It was SO GOOD! It's definitely our new favorite salad! My husband said he could have eaten the entire dish himself because it was so good.

Every year, the week of Christmas, I make a very special meal specifically for my husband and two kids so we can have a peaceful celebration before we make our runs Christmas Eve and Christmas day. I try to make something different every year, but my husband asked me to make this salad again, even though we've had it several times since I made it last year. He LOVES it!!! We all do. It has become a staple at our special dinner. I will definitely look through my A.B. books for our New Years family feast on New Years Day.

But here we go again with the posted recipe not matching the show. To not even wilt the spinach a little - a crime, to say the least! I combined the two recipes, and it turned out fabulous. I saved only 1 Tablespoon of the rendered bacon fat, and combined it with 2 Tablespoons of EVOO. Tossed the crumbled bacon back into the pan to re-warm after the dressing was whisked together. Added the spinach, onions and mushrooms (LOVE fresh, raw mushrooms to the pan, tossed gently and wilted ever so slightly. Perfect - I am proud to serve this at family gatherings! Thank you, Alton!
