    Made in a pan w/o roasting first. Used butter for the onions & garlic, more ginger, coconut milk in place of cream. Add cayenne and more ginger (1 TB fresh. Good.

    Great soup recipe! I used vegetable broth, Earth Balance instead of butter, and coconut milk instead of dairy cream, and it was wonderful veganized!

    Had acorn squash just sitting around so tried this recipe and it was a hit on New Year's Eve for our dinner party. Even my friend who loathes squash tried it and ate the whole serving.

    I followed the recipe exactly. This was a really nice soup with good depth of flavor. It could easily be a main course with how rich it is. I will definitely make this again. It's perfect for a fall/winter night!

    best squash soup i ever made. Normally when i made this soup it always turned out more bland.
    I put some fried onions on top of it. It was excellent.
    would do again!!!
