    I made this soup as my very first attemp at a Butternut Squash soup. My bf, who doesn't like ANY squash of any kind, thought it was really good, and ate it all!!! I now make it on a regular basis. Thanks Alton for helping me get veggies in my bf's stomach. 8D

    I made this for Thanksgiving using all organic ingredients...a large pot at that and it was fantastic. I roasted the squash till it was carmelized and it added tons of flavor. I left out the ginger...sorry and didn't use much heavy cream. Also used celtic sea salt(incredible flavor. It was a hit. There are so many variations you can do..mine is just one of many. Adding the honey gave it just the right amount of sweetness. Thanks Alton for another great recipe!

    I made this for a bridal shower and everyone was asking for the recipe. It was a big hit and tasted great. I added sauteed onion and carrots to the broth and left out the minced ginger. I had to adjust the squash-to-broth ratio because it was too thick. Next time I think I'll peel the squash before roasting it because I'm too impatient to let it cool. Thanks Alton!

    Im a soup maker but never butternut squash. I had tasters lined up for this one. The recipe was an easy read, not hard to do, ingredients simple to get. It was very good that night BUT by the next day it was fabulous. I one and half the recipe hoping to freeze some. Didn't happen. This is a great one for your recipe box. Everyone liked it, even my hubby whose a meat & potato guy.

    I made this soup and it came out great tasting.
    Alton Brown never ceases to amaze me with his recipes.
    I never would have thought of adding honey in this soup.
    It adds just the right twist of flavor and sweetness.

    I LOVE butternut squash soup and raviolis! This recipe is perfect!! I used "non-fresh" ginger and nutmeg--still amazing!!!...AND I always go heavy on seasonings!!!

    The soup was delicious! The fresh ginger and nutmeg brought the soup together for me . Also, the video made this recipe much easier to make. Thankyou

    you can substitute Egg Nog for heavy cream in the holidays; works great, just be sure to adjust the spices

    The search is over for a great butternut squash soup. If you like to make soup from scratch but are short on time substitute (4 10 oz. pkg. of frozen pureed squash. Velvety smooth and tastes delicious. I used only 3/4 tsp. white pepper so as not to overpower the soup. I also incresed the heavy cream from 1/2 cup to 3/4 cup.
