This soup was DELICIOUS!!! I made it yesterday for Thanksgiving and the whole family LOVED it, even my husband who doesn't like squash loved it! I made it with the butternut squash we grew in our garden and we joked that Alton would approve of growing your own squash to make the soup. ; The ginger gives the soup a wonderful and surprising kick! We served it with a dollop of creme fraiche. I will definitely make this again! Thanks AB!!

Restaurant quality soup. Thick, creamy, really to die for. Followed recipe as is, really the best squash soup I've had. Will make again and again! Alton does not fail!

This soup is so good. I did not have a stick blender so I had to use a food processor which was a little time consuming but it was worth it. From the ingredients, it appears to be low fat and healthy too.

What a great soup!! In the interest of saving calories, I used milk instead of cream and it still came out creamy and delicious. I also sauteed some onions before adding the roasted squash to make the soup a little more savory than sweet. I topped it with sourdough croutons and it was fabulous!

I HATE squash, but decided to try this soup. I watched Alton's video, and figured it would be easy. It WAS easy, and Oooooo Sooooo GOOD!! It was kinda hard cutting the squash, but I did it exactly like he did in the video. If I hadn't seen it, I don't know how I would have gotten the squash cut. Mine took a lot longer to cook; about 45 mins. I didn't measure ingredients, just 'eyeballed' everything, and it turned out fantastic!!! Everyone loved this soup! I will definitely be making this on Thanksgiving, AND whenever my family asks for it!! Thanks Alton!

Yummy, I would call this recipe "Liquid Gold"! Great creamy texture with a fresh rich taste. Alton can not make a bad recipe, if he tried.

I used lowfat evaporated milk to cut calories. Not quite as rich tasting, but still quite delicious!
