    I made this recipe doubled, since finding 6oz of evap milk, 10oz of shredded cheese, and 8oz of pasta is hard (though I ended up with WAY too much. It was good, but I have a feeling most kids would prefer the Kraft Mac & Cheese in a box (or at least be indifferent. It came out kind of bland. Maybe next time I'll try a more flavorful cheese, like bleu. The recipe left out some details, so here is what I did: 1 elbow macaroni comes in large and small. I used large, but I think kids would prefer small; 2 The recipe didn't specify how much pepper. I used about 1/2 tsp., which I think was too much, esp. for kids. Grind extra fine or leave it out. 3 I left the heat on low after draining the pasta and allowed the pasta to cook dry a few seconds before adding the butter. By leaving the heat on low, I didn't experience any runniness at all. 4 Hot sauce can be a little smelly (as someone noted depending on the brand. I used Buena Comida Mexican hot sauce because I know Frank's hot sauce does have a distinct odor.

    This was so easy. I put in a few sprinkles of red pepper instead of the hotsauce. Will have to try adding other things like the chicken or broccoli as some of these other posters have done. Good job AB !!

    Fast & easy way to use left over cheese in the fridge. I have tried it with different types of cheese. Very good!! I'ts my favorite.

    Alton Brown, this recipe is good and delicious (from my 3, 5 and 7 year olds!! Was very easy and really so much hartier than typical stove top mac and cheese's. Sauce was thick and creamy and VERY flavorful.

    While I still love Alton's baked mac and cheese must more than this, it was a delicious, tasty alternative to Kraft. Next time, I'm going to skip the hot sauce b/c i thought it gave the meal a funny smell (but that's probably just me.

    Usually the recipes we tried have too much in the way of crumbs on top. This method was very good. I made it into the day after mac & cheese toast. The kids and adults ate every bite of that for a treat between meals.
