Best waffles ever! Any leftovers work great as cold snacks -- or my favorite, the 'bread' for a ham sandwich.

We loved these. Did just a few mods. The sweet potatoes that I had were left over from Thanksgiving, so they were already cubed and roasted with a tiny bit of honey and some cinnamon. I loosely measured out 1 1/2 cups.

Like another reviewer, I used three whole eggs instead of six egg whites. I beat the yolks in with the sweet potato mixture and whipped the whites. Folded in as instructed.

I also swapped one of the cups of AP flour for whole wheat flour.

These were fluffy and filling and will be a Thanksgiving Leftover Tradition from now on. Thanks Alton!

These waffles were great. The taste was great. I used graham flour instead of all purpose flour. The waffles were light and I froze a bunch of them for later use.

Excellent waffle! The addition of orange peel was brilliant. I'll add cinnamon the next time I make them. If you need an idea to use up the egg yolks, make Ina's Double Chocolate Pudding. It uses 6 yolks, and is outrageous. Thanks Alton!

This was great! I used tangerine peel since that's what I had. The waffles smelled great and were awesome. I recommend only eating one. They were pretty heavy and held me over for quite a while. Couldn't finish them but I'm going to freeze them so I can use them as a quick sturdy morning breakfast.

We really liked these waffles. I used 3 eggs like several other people. The batter is really thick and they were very filling. The taste was wonderful. We couldn't taste the sweet potatoes at all, but could detect the citrus/orange zest. Next time I think I might try to add 1-2T of orange juice just to loosen the batter.

Well, this is one of the best waffles I have ever had, its wholesome, sneakingly nutritious, savory, pretty quick and perfect for my family and I. I hide veggies in everything...I keep sweet potato puree in the refrigerator always, so this was a great recipe for me! I used 3 whole eggs and added some chocolate chips and flax seeds just to purk it up a little. Wonderful !!!!

My kids (ages 5.5 and 3 were already full from dinner but as soon as these waffles started coming off the iron, their little hands couldn't stop grabbing and asking for more more more please. I ate some with them and I have to say the are excellent. I am a fan of sweet potatoes and citrus zest so it wasn't a surprise. Anyway, the only changes I made was to use (3 whole eggs - as another reviewer had done, to save time and not waste the yolks, to mix half all purpose flour with white whole wheat flour, and to use soy milk. Next time I'll use less brown sugar since they were plenty sweet. A definite make again and a go to meal for us in the future.
