    My kids (ages 5.5 and 3 were already full from dinner but as soon as these waffles started coming off the iron, their little hands couldn't stop grabbing and asking for more more more please. I ate some with them and I have to say the are excellent. I am a fan of sweet potatoes and citrus zest so it wasn't a surprise. Anyway, the only changes I made was to use (3 whole eggs - as another reviewer had done, to save time and not waste the yolks, to mix half all purpose flour with white whole wheat flour, and to use soy milk. Next time I'll use less brown sugar since they were plenty sweet. A definite make again and a go to meal for us in the future.

    I love the texture of these waffles, used lemon instead of orange rind and substituted out 1 cup whole wheat flour. They freeze beautifully.

    I always trust Alton Brown and the research he puts into and explains in his recipes. This time, however, I was sadly disappointed in the end product. I am trained in the culinary arts and feel qualified to say I followed his recipe by both ingredients, method and as he showed on TV. The result was a "heavy" waffle not unlike all other waffles that are made with baking soda as a leavening agent. My preference remains with a yeast batter, traditionally referred to as a Belgian waffle. The end result is a light, crisp waffle that makes my breakfast guests say they've never tasted a better waffle. Having said that, Alton is still THE MAN.

    These waffles where pretty good stuff… but I am thinking that if I made up the chipotle mashed sweet potatoes and used leftovers in the waffles that it would make a great side dish/bread for dinner…
    Anyone else given this a try?

    After watching Alton Brown make these on his show, I immediately wanted to make them. However, after i made them, I was extremely disappointed. When I attempted to extract them from my waffle maker, the waffles wouldn't stick. (Meaning, when i got a waffle out, the two sides were split. Other than that, the waffles had a good flavor.

    These are amazing! I'm a strong believer of a bit of healthy experimentation, so I made a few changes...

    For 2c all purpose flour -> I substituted 1c whole wheat all purpose 1c all purpose white
    For 1c milk -> 2/3c oj a shot or so (all I had left of pumpkin spice cream liqueur (yum! almond milk to fill
    a Tbs or two of clover honey
    I also used 3 whole eggs rather than 6 beaten whites. The batter still came out a bit thicker than regular pancake or waffle batter, but it cooked perfectly. The waffles were fluffy and had just a touch of crisp. Topped them with honey and spicy, crunchy sweet potato chips :
