I make these waffles in a huge batch and freeze them for breakfasts for weeks. They are better toasted

very good recipe. i think i put a little too much orange zest in, because i adjusted the reciped for the 10 egg whites i had left. it was very good, and i'll make them again!

The orange zest overpowered the sweet potato flavor a bit too much. Other than that, it was excellent. Also, it only took 2-3 minutes on my circular waffle iron. 5-6 would burn it to a crisp!

This has come to be a Christmas brunch tradition in my house. a little sawmill gravy and biscuits, an egg dish and sweet potato waffles and berry syrup and, don't forget the mimosas.

This recipe was a lot of work but I made lots and put them in a freezer bag. Now when someone wants a snack I toast one and they get a waffle not knowing they are also getting a vegetable serving. I like them best as a desert served with butter pecan ice cream. Yummm Thanks AB!

I was thrilled when Alton Brown used sweet potatos as the theme of one of his shows. I have been making traditional sweet potato pies forever.
This year I came across a sweet potatoe muffin recipe with cranberries in a community newspaper and now I am ecstatic about the waffle recipe. I tried it this week and it was a big hit
with my family. It is a new favorite.
Thank you for giving Georger Washington Carver his proper recognition!!!

My 10 month old loves sweet potatoes, and any kind of bread like substance, so I thought I'd give them a try. Easy to make, especially if you have the potatoes cooked ahead of time. Only drawback is the number of egg whites (and no egg yolk used - though I actually had some in the freezer from using the yolks in another recipe, and they worked fine. Love the fact that it only calls for a 1/2 stick of butter instead of the 2 sticks my regular waffles do. Very tasty - with and without syrup!
