    These waffles were tasty, but were a bit too light. I like my waffles to be light on the inside with a bit of a crunch on the outside, but I could not achieve that. If I cooked them longer in the waffler, they just burned. I just couldn't get them to look as good as I am used to seeing waffles. I will decrease the amount of egg white next time.

    I substitutted whole wheat flour for AP flour and also added a dash of cinnamon and nutmeg. THe waffles turned out excellent! I served them with warm syrup, toasted pecans and apple&maple chicken sausage and everyone cleaned their plate.

    This recipe was a bit more work than I anticipated. The final product was not as light as a buttermilk waffle. Although there was a nice orange flavor these were not a favorite of the kids. In the future I would reserve this recipe for the adults of the house as they can appritiate the flavors as well as the nutritional value of the Sweet Potato.

    I made this waffle using canned pumpkin, and it worked just fine. We really enjoyed it.

    I made this the morning after T'giving for the family. Such a hit, they've requested it again for Christmas. Alton prefers steaming, but I BAKED the potatoes to enhance the sweet flavor. Did that step the night before to save time in the morning. Also added cinnamon and served with a variety of syrups (Birch, Maple & Cane. Yum!

    Great taste, used batter to make pancakes, too.
    Hint of sweet potato taste, not overwhelming.

    A novel use for a holiday standard. Perfect for brunch the day after Thanksgiving or Christmas. It prepared more than enough food for 4 though.
