    I am not a fan of waffles, however these were light and tasty with the lingering taste of the fresh orange zest from our own orange tree--- just sweet enough.

    I made a huge batch (left out the orange zest, the whole family really enjoyed them. I really liked the texture, and the sweet potato taste was great. We froze the leftover mixture in containers for later. Last night I grabbed one out, cooked up a few waffles for dinner, and the frozen batter worked great!

    More work than frozen waffles, but make ahead and freeze, pop in toaster to eat! My kids are devouring them! Any way to get some extra nutrition into them is great! Sweet potatoes are loaded with vitamins! More nutritious than your standard waffle!

    I made this sweet potato waffle recipe for Saturday morning breakfast. My goodness what a lot of work for a waffle.
    Could not taste the sweet potato, only the orange flavor. My husband liked them-ok... but no better than the regular waffles I make (which is much easier & less time consuming.

    These were pretty good, but came out very dark. I think they would be better without the orange zest. Probably wouldn't make them again, there are too many other recipes I have made that are better.

    These are definitely a bit more work to go into at 7 am on Saturday than I would normally, however, I think they're worth it for a very special holiday treat, say, Xmas or Thanksgiving. I actually enjoyed the somewhat heavier, more dough-y texture. My kids and dh agreed, although there were no raves. I think they appreciate waffles in any form:

    I made this one morning for the family. Told the kids it was regular waffles. After they declared the first bite good, told them the truth! They continued eating and asked for more. Can't stand sweet potatoes myself, but this recipe was pretty good. Not quite as crisp as regular waffles.
