    THANK YOU!!! THANK YOU!!! THANK YOU!!! I was finally able to produce a gluten free chocolate chip cookie that we could all eat and didn't have to travel fifty miles to get the items needed. They are just as good as regular cookies, ok I'll be honest, I think they are better then my regular cookies. I found no texture, taste, or smell differences. I am not GF but my husband is. I love to bake and cook. I had found what was supposed to be a cup for cup replacement for wheat flour. I made bread, one of my favorite things to make. I had it timed so that it would come out of the oven just as my husband was coming home. I just knew he would be thrilled to have hot fresh baked bread he could eat. When it came out of the oven, it was not bread but a fine subsitute for a hockey puck or door stop. I said forget it, found some pretty good mixes and used those as much as I hated to. Then I saw this eppy and said, what the heck, Alton just walked me step by step through this, let's give it a try. Well now I'm willing to do more, just waiting on AB to produce. :-

    My first batch was lumpy, doughy, bitter and nasty. Then I added some water to thin the batter out, plus more white sugar, SCORE! I did use WHITE rice flour that I had, and maybe that made a difference. Now they're yummy, and almost gone.

    I have tried so many choc chip cookie mixes, including Bob's Redmill, Pamela's bake mix, and nothing has come close to the real deal - until this! What wonderfully good, substantial gf cookies! And there's no texture issues like we tend to see with gf cookie recipes. Louis Kestenbaum has a gf recipe blog out there and his cookie recipe was my favorite - until now. Sorry Louis Kestenbaum, but these cookies blow even your recipe away! Also, just a note on adding oatmeal, as one reviewer spoke of doing, make sure they're gf oats with no chance of cross contamination.

    Sometimes we don't even get to the cookies - the dough is that good.
    A lot of recipes I make in 2 versions: 1 regular for my family, 1 GF for me. The ingredients are cost prohibitive for our family of 6, and they wouldn't like it anyways.
    When I can find an economical GF recipe I don't need to hoard and that my whole family enjoys, it's a keeper. This fits the bill. :

    This is the very best ever gluten free cookie I have ever eaten or made! Hands down. Please do the math for us and make cake or muffins or bread or whatever. We'll make it and eat it. I'd love a good tutorial of how these flours work together and how to use them for the best possible result.

    I've made many gluten free cookies in my life, and they have all left something to be desired. This was a huge surprise - it was fantastic! Finally a gluten free cookie that left me as satisfied as a regular flour cookie! I substituted fake butter for the butter and Hemp milk for the whole milk - which resulted in a delicious gluten free, dairy free cookie.

    Dear Alton Brown and or Producers of Good Eats,
    I am a 14 year old aspiring chef and i was diagnosed with celiac disease about a year ago. It was hard in the beginning to adapt to a gluten free diet but now it's just part of everyday life. My mom also has this condition and we want everyone to be aware of it. I can't tell you how excited we get when we go to a restaurant we can eat comfortably at. I appreciate this show dedicated to the cause and i hope to see many more episodes in the future focusing on food allergies.
