These are wonderful, easy cookies to make and taste great. I did have to reduce my cooking temperature to 350 instead of the 375 listed. Could be my oven. Also it took only 10 minutes to cook these cookies instead of the 14 minutes in the recipe. I would caution everyone to check the first batch closely and then proceed from there.

For years I have searched for a chocolate chip cookie recipe that would be chewy and not puff up in the oven. Finally I have found it. Excellent recipe. Wonderful texture. And the cookies look great- bumpy and chunky- just like the ones you over-pay for at gourmet stores.

Though I adore Alton Brown, I think this recipe has a few errors, which are possibly typographical errors. The oven temperature is about 50 degrees to high, so be careful. Also it seems to need a touch more salt. In addition, the 5:1 ratio of brown to white sugar makes it too rich, especially with the semi-sweet chocolate. In the end, the cookies just taste flat, like they are missing something, most likely salt, and they are not very attractive. Again, I am sure that Alton Brown is a fabulous chef and a credible source for information, but this recipe did not turn out well.

The secrets to chewy chocolate cookies revealed! This dough chills well -- we enjoyed fresh baked cookies for a week by keeping the dough in the fridge and baking a few cookies at a time.
