Do not use ALL PURPOSE FLOUR !!!!!! I've made these cookies many times, tonight they turned into a paper thin mess. I didn't even think about what flour I was using until after I made the mess and noticed loser heather's comment. If done right these are some of the best cookies I have ever had. Whenever I look for recipes here I always start out with Alton Brown his stuff is the best.

I made these cookies twice. Once following recipe, turned out good but not great. Not super chewy but good. Then, I noticed it was super similar to the Nestle Tollhouse recipe. I just switched out the all purpose flour for the bread flour and they turned out great. One note: I prefer thicker cookies so I refrigerated the batter for 30 min before scooping out with a mini-ice cream scoop to make balls. For thinner cookies, a warmer batter will spread faster so don't refrigerate

WARNING! use bread flour. no joke! if you use all purpose they will melt together into one giant delicious crispy cookie blob!! otherwise great recipe, add pecans instead of ch chips and it is like a praline :

I followed the instructions in the video, and undercooked them, but they still turned out flat and they spread...tasty, but not the best I've tried.

I will never again use a recipe on the back of the chocolate chips bag! These are the best cookies I have ever eaten. Weighing the ingredients made all the difference. It was so accurate and they turned out perfectly. I love this recipe!

The reason the measurements are by weight is that Alton believes it to be more accurate this way. The cookies are awesome!

These cookies are delicious! Took them to a picnic yesterday and everyone absolutely loved them. We were sad there weren't any left for us to take home :-( Guess we'll just have to make another batch! My husband followed the recipe exactly as written. He believes the second batch of cookies that spent longer in the fridge came out a little more "poofy" though. So if you have the time available maybe leave the batter in the fridge a little bit longer to chill.
