These cookies are very soft and chewy! I used all brown sugar and baked at 350 for approx 10 minutes, any longer the bottom will brown and burn! After dough was mixed, went into the fridge for 2 hours. After I weighed them out at 1.5 oz each, I put them back in the freezer for about 7 minutes then into the oven and they turned out about an inch thick.

Yes this is a great recipe . You have really watch these. Like when he says 15 minutes he means 15 minutes MAX. Any longer and your cookies will completely burn. Mine burnt a little on the bottom and edges even tho i baked them for 15 min. so I recommend you bake these for only 13 minutes then take them out of the oven and let them sit I the baking sheet for another 2 minutes then move them to the cooling rack.

Best choc chip cookie ever. I have made this recipe so many times I know it by heart. My husband's coworkers are always asking him to bring them some. Great recipe, easy to make. Always turns out perfect. Thanks, Alton!

This was a good recipe..only thing I did was 1 cup dark brown sugar 1/4 cup light.. also took them out as soon as they brown. My BF eat them all. I would hear him in the middle of the night snaking away.. lol I'll make this again..

This is the best chewy cookie recipie - ever. My only advice is invest in the good chocolate. I bought the store brand chips & they just weren't the same.

Best chocolate chip cookie, ever. No hard, dry cookies at my house. Just don't over-bake. Seriously, stand in front of the oven for the last 3-4 minutes to make sure. Take them out when they just slightly brown on the edges. Even if the middle looks gooey. Let the gooey ones sit on the hot pan a little longer before putting them on the cooling rack.

I have been making these cookies for years now and this is my favorite chocolate chip cookie recipe. My advice for anyone having trouble with the cookies not being chewy is to make sure you're using the bread flour, because that makes a difference, and you might want to try decreasing the baking time. I bake mine at 375, like Alton says, but I take them out after 8 or 9 minutes. Everything else I follow to the letter and they come out great for me.

I LOVE this recipe. Have been using it for years. When and why are the measurements now in ounces instead of cups though?
