I LOVE Alton Brown, but I've made this recipe twice and it hasn't really produced a "chewy" cookie either time. I've used the exact measurements, parchment paper, chilled the dough, and rotated baking sheets in the oven. Every time I've had to turn down the oven as these cookies burn on the bottom at 375F. I don't have a problem with oily, flattened, or spreading cookies; these have always held their shape. The biggest problem is that they aren't chewy!! They are dry, cakey, and crumbly. They taste okay, but the texture really ruins it for me. I don't know what else to do to make these chewy, but sticking to this recipe isn't working. :( It's so sad since I usually love AB's recipes. Other commenters have suggested that some people aren't accounting for altitude, but I'm not in high altitude here.
Alas, I'm still searching for the perfect ooey gooey chocolate chip cookie recipe.

I registered to write a review:-. I made cookies from this recipe many times and I can say that this is the best, no fail cookie recipe ever! Before, I used recipes that made cookies harden after a few hours. But not this one- the texture is great even after many days! After putting from the oven, when they're still hot, chocolate chips are melting and they taste soo good! I usually add more chocolate chips that recipe suggests, because I'm a chocoholic. This is also a great cookie dough base recipe- next time I'm going to replace milk choc and use white chocolate, dried cranberry and oatmeal instead- I hope it will turn out equally great.

The texture is just as promised: chewy and soft EVEN after it's cooled, which none of the other recipes I've tried thus far have delivered. The BF loved it so much without chips, he said it might be the best chocolate chipless chocolate chip cookie he's ever had.

Check out my post of about here on Facebook under Notes.

This is the best cookie. I did add one tablespoon of espresso powder to see how that would taste. It, too, is very good. Maybe more of an adult (? cookie ---- really good with a glass of red wine........ I also add walnuts and pecans. Either way, the cookie always is very popular. They freeze well too.

I tried this recipe because my old chocolate chip cookie recipe yielded beautiful cookies that lost their chewy texture as soon as they cooled. I was looking for a recipe that would make cookies that stayed chewy for days afterward. I haven't been able to keep a batch of these in the kitchen for longer than two days. They are so good! They stay chewy after they've cooled, and everyone loves them.
I noticed that a lot of the reviews for these cookies comment on how much the cookies spread, or that they had to turn the oven down. To anyone about to make these cookies, I strongly suggest that you buy the bread flour and a digital kitchen scale (a decent scale can be purchased at Walmart for about $20. Also, make sure the dough is COLD. I didn't have a scoop, but I did weigh each ball of dough before I put it onto the baking pan (1.5 ounces each, as Alton says. I baked my cookies for 12 minutes.

This recipe was awesome. The bread flour is the key, my cookies came out a perfect, chewy consistency! I made one batch with chocolate chips and the other with with walnuts and caramel chips. I received rave reviews. Thank you Alton!

I love this cookie... It was very chewy and yummy. My family prefers a more light and flat cookie. These cookies are fat and fluffy.
