    I liked this recipe because the croquettes stuck together and browned nicely. I used well drained canned tuna and did not have panko crumbs so I used plain bread crumbs and they came out very well. I combined the ingredients, adding a little dill and cayenne, let the mixture get firm and formed 4 1/2 patties which I coated with the crumbs and then put in the refrigerator for about 30 minutes. An easy, tasty and very inexpensive main dish.

    Yum! Even my kids who don't like tuna ate it. And what a cheap meal! I followed the directions completely and they turned out great.

    i made this with salmon instead and its great, going to try tuna later this week or next week.

    and to loreen it calls for pouch tuna not can this could be why your portions are offf

    I didn't have an egg, or lemon. So I substituted mayo.Made it like the recipe said, including the VERY important rest period prior to breading. Then I crisped it up and served it over rice with sushi style spicy sauce, which is mayo and Chinese hot sauce. I would recommend the type of tuna Alton used, or other higher end. It's only a few cents more and it makes a difference. This was only enough for two people even with the rice. I will be making it again and again.

    I am not a big fan of Tuna, but it is an inexpensive protein source, so I decided to give this recipe a try.

    Great taste and quickly and easily made. I do agree that they could have a little more zip, so I used spicy brown mustard instead of the Dijon. I am also going to try horseradish sauce for variety.

    My 2 kids love it as well, so that makes it a definite Yes! at my house.

    I've finally found a canned tuna recipe I can enjoy any time I want.. I doubled the recipe and yet it still wasnt enough.. This recipe was definitely quick and easy.. I used 2 canned tuna albacore Bumble Bee brand since it was on sale. Next time I will use 8 cans since I love big portions and is great for snacking 24/7. I think next time I will try using 2 tsp. grated lemon with the juice with the 8 cans..

    I've made these several times and saw Alton make these on Good Eats. I think those of you who had "too wet" croquettes ignored the step where he lets them sit for 15 minutes. That 15 minutes wasn't so you could walk the dog, it was to let the extra moisture drain from the croquettes. Something you should know about Alton, when he says "wait 15 minutes", he says it for a reason. His cooking style is very scientific (look for his souffle video! and things should be done EXACTLY as the recipe states. This doesn't mean you can't substitute ingredients but processes are there for a reason.

    Having said that, this recipe is so easy and successful every time. I'll never eat another tuna sandwich again! I love Alton's explanations, his geek-speak is just what home cooks need to successfully pull off a great meal.
