These nachos are awesome. I de-seed and mince the jalapeños to make it a little less spicy, and I use Monterey Jack and cheddar instead of what's listed. This is a great, simple recipe.

These are very similar to mine but I also place a small amount of refried beans on the ships before addinf the rest. These are alwyas a hit and glad Alton has made it available oot all.

Take heed to the warning about the jalapeno seeds, I didn't and put them seeded on each chip and they were too hot to eat...until we pulled the peppers off. They were delicious however, I couldn't find the Mexican cheese he called for so we just used Monterrey jack cheese and they still came out great. I like this style of nacho because you get just enough cheese on each chip and don't have any with nothing on them like a pile of them or something. Highly recommended with Alton's Guacamole recipe!
