You MUST use kosher salt. If you follow the recipe with table salt they will be inedible.. 3TB of table = 6TB of kosher! Best recipe on FN!

I love this recipe! I get requests for these ribs every year, and they're not difficult at all to make. I can't cook with wine, so I substitute some beef broth and 3 tbsp of apple cider vinegar in the braising liquid. Very yummy!

Good stuff. I agree with cutting the salt down. It was great as a rub, but when reducing the basting liquid, it became very salty. It you want to use the liquid as a sauce, definitely cut down the salt. The heat was just the right amount. The family loved it. Thanks Alton!

Delicious and tender. I made these for Father's Day. Reduced the salt by half. Cooked, in a covered foil pan on the gas grill, with indirect heat @ 250 degrees for 3 hours, then finished them off over direct heat until nice and caramelized. We will try the braising liquid next time.

This has become my stand-by recipe for ribs and my husband ADORES them. The rub is great on other meats too (beer can chicken - yum!. I agree with cutting down the salt a touch and skimming the fat as you reduce the juices. I have yet to have a bad result - the ribs are almost difficult to remove from the pouch because they're so tender they begin to fall apart.

Wow, I can't believe there are negative reviews for this recipe. I've made these ribs several times and they taste better every time. Love the rub on bbq chicken, try it you won't be disappointed.

followed the recipe exactly and the ribs were tough and they tasted like pure vinegar. it was disgusting and i had to throw them out

We tried these today for the first time ever with a 3 pack of baby back ribs from Sam's club. Followed recipe and made two changes. 1. I took the advice of fellow reviewers and used half the amount of course Kosher salt , 2. I omitted the jalapeno seasoning. I did add extra seasonings for the third slab. Hot today, so I threw them on the grill (Weber Genesis E310 Gas Grill. These ribs came out PERFECT, mine looked almost like the photo :0 They were so EXTREMELY Tender & Delicious...The meat was just barely hangin' onto the bones.....Oh and the FLAVOR...simply scrumptious! Hubby wants to try a different bbq sauce next time, just to see if they can take on other flavors with this method...

I followed the recipe exactly, but I did not like these ribs. I'm used to *almost* fall off the bone tender ribs. These were no where close to having a bit of tenderness. Also, the liquid and rub left much to be desired. I'll continue with cooking in the crock pot and finishing on the grill.
I do love Alton though! I believe this is the first recipe of his that just didn't work for me!
