    absoultly the best ribs around. i have tweaked the recipe, and it's still great!!!

    I am a griller and smoker, but this is the only way I ook my ribs. I use apple juice instead of the wine.

    But everyone LOVED it! I am suddenly a great BBQ'er. I've put this on any pork I could find and loved it. Makes excellent baked chicken too.

    I've used this recipe a few times... each time it was a hit. One thing I do is I don't reuse the braising liquid. At that point I throw the ribs on to the grill and top with my favorite BBQ sauce (usually I make my own. I've never been able to find the jalapeno spice, but chipotle powder works very well. These ribs can have a kick! Also, I've tried different liquids instead of white wine, and I think my favorite combo is cider vinegar and beer.

    This is a weekend rib recipe considering the time it takes. I always tweak the seasonings a little bit to suit my taste, but the result is always perfect ribs... the wife and kids can't get enough of 'em. I make double what I need, because my wife and I always argue about who gets to take the ribs to work for lunch the following week. Alton is a god!

    These are the best ribs I have ever made. My sons are still talking about them! They sure were finger-licking good! I can't wait to make them again for my friends! Alton Brown is the best!

    searched foodtv for 3 appetizers. for a girls weekend. read thru hundreds found this one, read it, sounded great. Dint realize baby back ribs were expesive (2 slabs $30 Blindly trying it on the girls, they all loved it. I, to, could not find Jalapeno seasoning. but substituted Mexician chili powder and I was out of onion powder, omited. It was a lot spicier than they were used too. ALso didnt have time to make to braising liquid, so it was just the dry rub and again they were a big hit!!! I will have to make these for the family next.

    I thought the quality and taste of the rub was wondeful.I acutally used the entire recipe for one batch of ribs because my family likes alot of "punch". The brazing liquid did not reduce as nicely as I had hoped, but did add a nice balance to the rub.

    After wtching the show, I decided to try these for Father's Day. But because, 1 most of the people at this cookout don't/can't eat very hot/spicy food and 2 also could find Jappaino spice, I omitted it. Thought we do like garlic I substituted it with garlic powder, also I increased the onion powder to 1 tablespoon.

    I was doing a large amount of ribs (3 slabs of baby backs and 3 slabs of short ribs, after I refrigerated the ribs inthe rub overnight, I took them out of the foil and cooked them in a roaster/slowcooker (using a rackat 300 degree and basted them ever 20-30 minutes.

    The were requested again for July 4th!!!
