Food to feel great about. What a powerhouse of a meal. I followed everything exactly. I had a weekend of eating meat so this vegetable only soup really hit the spot. I recommend no substitutions. The kale gives it great texture. The squash absorbs all the flavors of the broth like little sponges. Make this soup immediately before summer gets here. Enjoy.

This is an awesome recipe. I did not stray from the recipe (as I usually do and I am glad I didn't. This soup was nothing short of excellent. I plan to make it again for friends and family. Enjoy.

I have never had butternut squash but the soup sounded good.I work in a Dental office so I cut back on the garlic.The whole office loved and wants to know what is it that is so wonderful.I am keeping this one a guessing game.I LOVED it.I may try it with sweet potatoes next time.Give this soup a try.

This soup is amazing. The only reason I give it 4 stars is the time, it does take a while. But it's worth it, rich, savory...delicious!

I made this last night & it was soooo good, my husaband even loved it! So easy to make & good for you too! I followed the recipe but added 1 more carrot & additional kale.
Will deffinately be making again! :

Awesome vegetable soup, the BEST I've ever had. I made the recipe exactly, but I added one diced rutabaga. It's hard to believe Alton achieved this depth of flavor without using meat or stock! Love it and will make it often!

I decided to make this soup after watching yesterday's episode of "The Best Thing I Ever Made". Wonderful soup! The only thing I did differently is use homemade turkey stock I had in the freezer. I had 2 qts. of it, so I added the water to make up for the additional 1/2 qt. that was needed. DELICIOUS and a new favorite! Thanks AB.

The best vegetable soup I've ever had. As usual, people adjusting the recipe and then complaining that it doesn't turn out right. Guess I'll never get it.... Great soup AB!
