    Very easy, next time I would add more sage, and rosemary. This is my favorite for a vegetable soup now. Since most of the ones I have made are on the high end of salty. This recipe was not too, too salty and that made me happy,

    I have never rated a recipe although I watch Food Network all the time, but this made me sign up. Also have never used one of Alton's recipes. But this recipe is by far the best vegetable soup I have ever made. The only thing I didn't add was sage but otherwise I followed recipe to the letter. I am a single lady so I thought I would be freezing half, but I loved it so much I ate it all myself in a matter of days. The flavor is awesome, and I did like the taste the vinegar added.

    I love this soup. I am not vegetarian and I think this is a great vegatable soup. It reminds me a little of hot & soup soup. You get that little twang from the vinegar. I did substitute the sage and rosemary for oregano and basil. When I want my son to eat it I switch out the butternut squash and throw in a good handful of small pasta like ditalini. He likes it too.

    Soup was okay, but vegetable soups by nature aren't all that super flavorful. I didn't find this to be an exception to that rule. If you want the super nutrients in kale, go ahead and use it, but I've had more success with spinach. The butternut squash was okay too, but have had more success with sweet potatoes. My ONE direct change to this recipe was adding chicken stock but otherwise kept to recipe 100%. Overall I didn't find using the sage and rosemary combo was super flavorful either. I will not be making this soup again. I do give 5 Stars to Alton's personality and smarts!

    This soup is wonderful. I decreased the H2O to 1 1/2 qt. xtra kale. added red pepper flakes. It would be great w/ potatoes in it too. so versatile! Thx Alton for the soup that's very adaptable!!!

    I made this dish with one initial alteration - I only had 4 oz. of good mushrooms plus some regular white button mushrooms. Don't do this. I think the mushrooms are very important. I found that the broth wasn't rich enough for my tastes and the vinegar was unnecessary. Perhaps AB gets a better brand of canned tomatoes than I do - sweeter than my store brand can. To enhance the flavor I added a few shakes of Goya Adobo and then I completely cheated by pressure cooking a smoked turkey neckbone in about a cup of the soup stock and returning that to the pot. Now, it's a good soup. I may try this again, but I think I might interpret it with a nod towards tuscan bean soup. I might put in a little more squash, too, since it got fairly lost in the soup. And definitely no vinegar this time.

    To my palate, 2T of red wine vinegar was too much. I suggest starting with 1T and going from there. Otherwise, a good veggie soup recipe, seems forgiving for possible substitutions, but not terribly special. I saw the show and don't believe this is the best thing he's ever made. . . Giving it 4-stars bc I love AB.
