    This was the best soup and I don't like tomatoes. Added spinach instead of kale was good and less canned tomatoes and added chicken broth as well as water. Turned out excellent.

    I am vegan, so I left out the parmesan and rind. I don't care for sage or rosemary, so I used about 10 fresh basil leaves (chiffonade. This turned out so wonderful, so flavorful, so satisfying! It took me about 2 hours from start to finish, but it was so worth it!

    Alton, you're a brilliant man. This soup is incredible and accomplishes the meat hardiness without the meat. So delicious. It's a great recipe for kale as well. Both my husband and toddler love it too. I didn't have soy sauce so I substituted one and one half table spoon of worcestershire. I guess the anchovies make it not vegetarian. But so good!

    Amazing flavour! I did not have Kale, so substituted spinach and it was just...amazing. perhaps, the Parmesaan rind is the secret. This is now a fav!

    This is an amazing soup! I have used all sorts of greens. I've used portabello mushrooms. The parmesan rind is not essential. Very versatile and yummy!!! Don't forget the crusty bread!
