Howdy all,
Wonderful. Texture of fresh K2's. A few hints - listen to the recipe - using the dough hook at 4 min it magically lifts from the sides.You dont need extra flour. You have to kinda pour the soft ball into the rising bowl.Then, after rising the hour, use liberal flour and it rolls easily to 3/8" and cuts easily. Let rise the full 30 min. Do this and they will be light as a feather. I coat in a mix of granular sugar and cinnamon.
Like Krispys or the little ones at Pike Place market.

I made these for New Years as traditional Berliner jelly doughnuts. I didn't cut a hole, made a slit with a knife, and filled them with jelly with a pastry bag. These were a lot of work, but worth it for a once a year occasion.
I put the unfilled leftovers in the freezer. You can take them out of the freezer and straight into a 400 degree oven for a few minutes - good as new!

I made these for Christmas morning, and they were very well received. I especially liked the glazes, as true to Alton's word, they did not crumble when eaten.
One caution: only make what you need, when you need them, as they tend to get dry and less chewy / tasty when they are stored more than 24 hours.

I've tried lots of different doughnut recipes,but this is by far the best recipe ever!
My girls and I made it (they're 10 and 12 and besides them having a blast making them, they and their friends ate them all up!
Now that is some Good Eats!

I'm sorry to give these doughnus a poor review, but there was absolutely no sweetness or "taste" to these! The only way I differred was that I only used 1 pack of yeast instead of 2, but let the dough set an extra 1/2 hour additional to your recipe. More sweetness and taste needs to happen here....

We've made these twice now. The first time we should have added more flour, but they turned out good anyway. The second time, I was more careful to add flour by weight, and it turned out even better. Still not something you whip up for dessert on the spur of the moment though.

I had to use almost a cup and a half MORE flour just to be able to work the dough. Might have been because I used a hand mixer instead of a stand mixer??? I also used allspice instead of nutmeg because I ran out. Ended up taking 3 and a half hours to make - start to finish. These were great, but I won't make them again - too much work.
