In a bowl, mix the bananas, grapefruit and pineapple. In a small bowl, mash the raspberries with a fork, then add the yogurt and mix. Fill a parfait glass with one-third of the fruit mixture, then one-third of the raspberry yogurt and one-third of the House-Made Granola. Repeat the layers two more times, then serve.
House-Made Granola:
Yield:7 cups
Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
In a small saucepan set over low heat, combine the honey and coconut oil. Stir until combined, then remove from the heat. On the prepared baking sheet, mix the rolled oats, almonds, coconut, pepitas, puffed rice, sugar, salt and ginger. Drizzle with the honey mixture and toss to coat, then spread out the granola in an even layer. Bake, stirring every 10 to 15 minutes, until golden, 40 minutes.
