I have been trying to find a recipe for asparagus in vinaigrette with hard boiled egg that my grandmother used to make. This is still not quite it, but this was really good. I made it for Easter Brunch and everyone loved it. The best was that I could make it ahead and just throw the egg on prior to serving. Anne sure makes it easy!

It was good but I have made something similar before with balsamic vinegar instead f red wine which I liked better.

My family really liked this one and I have made this twice now. For our tastes, the 'snappier' the asparagus is left, the better the flavor. The second time, we added crisp bacon on top and that was delish too!

Anne I think your wonderful and your recipies and insight on Asparagus were great. This is a wonderful Vinaigrette and I use it on more than just Asparagus now.

Great dish to impress guests, and not difficult to prepare. Good for the chef, good for the company. And no running to the store for strange new items to add to the recipe.

No, I haven't tried this recipe yet. So most of you must we wondering why I rated it with 5 stars. I did because, my boyfriend and I love asparagus and now I have another way in preparing it! And by just reviewing the recipe, it sounds easy to prepare in minutes! So, let's all call ourselves "superstars" and try this recipe out! Thank you Anne Burrell for sharing this recipe to us!
