I made this today. It turned out perfect. I didn't have butternut squash so I used roasted white potatoes and added some green peas. Will definitely make again.

I've always been intimidated by pie crust. I am still amazed at how good it came out. Thank you for showing us how simple it is!!

Also made this with mashed potato on top then baked in the oven like shepherds pie and was delish! Loved the pastry version as well but live in Vietnam where it's super hot so pastry is hard to make. Has become a family favorite.

Ok, this was awesome, but so much work! I think it could be simplified- if you used leftover chicken or a precooked chicken then you could just roast all the veggies in the oven and add hot broth to the roux while the veggies are cooking. I subbed out the green beans for asparagus and button mushrooms- very good. I think the sage should be cooked with the broth to integrate the flavor better as well. My last option which I may do next time is just do a bisquick crust, her crust was great, but I am not sure if it worth the extra work, considering how intensive this recipe already is.
Summary- delish, but there has got to be an easier way!

This was exceptional. We used leftover smoked chicken and adjusted the recipe to account for not cooking the chicken in the broth. Added raw broccoli (leftover from crudites before baking and it ended up staying firm and bright green. It was so good the 2 of us ate every bite in 2 days' time - even the part I intended to freeze and make crust later. It is beautiful coming out of the oven - the look and aroma to keep your friends and family coming back every night!

Amazing flavor! Loved the roasted butternut squash. My gravy was a bit thin so I will tweak it next time but the flavor was outstanding. Thanks for a great recipe, Anne.

I made this with leftover Thanksgiving turkey and it was outstanding! I added mushrooms like many of the reviews mentioned and my family said they were the best part. I will probably use this crust recipe for my Christmas pies this years- I've been looking for a good crust recipe and I think I found it!
