This was an outstanding twist on a classic apple pie. Well worth the multiple steps involved in it's preparation. Nothing difficult to do, just took time and organization. Make sure you use a good apple cider. I used Honeycrisp apple cider. Don't use a commercial apple juice like tree top. Must be apple cider. the pastry cream recipe can be easily halved as it made way too much as written. also, sprinkle coarse sugar on top before baking for a little texture. I WILL be making this again!

This was a super delicious dish! It tasted like apple pie in a way and the caramel sauce was a great addition. A previous review stated that they used apple cider vinegar in the caramel, but the recipe says just use apple cider so make sure you don't mistake that or else your sauce will probably end up sour as vinegar is rather strong. It does make a considerable amount of filling, but that works bc if you have leftover dough you can always make more!

I have now eaten the crostata and I'm sorry to say I've downgraded it to 2 stars. I thought the cider vinegar was way too sour. I would use a caramel sauce instead. I didn't think the mascapone added anything special and would not use it.....maybe cinnamon ice cream? I roasted walnuts to sprinkle on the top for crunch. I did like the filling and plan on incorporating the huge amount of leftover into a rhubarb pie. All and all, I love Anne, but I thought this recipe fell flat.

I love that recipe was simple, but smart, she's the winner again, congrats both of you.
