    Cinnamon Cream is the key to this squash soup variation. I have several butternut squash soups in my collection (most with curry added, but what takes this recipe to the next level is the cinnamon cream garnish - brilliant! My first serving was marred by burnt tasting fried shallots - I guess I needed more details - temp of oil and time fried - but my second serving was perfect with the velvety pureed soup and swirled dollop of cinnamon cream (minus the fried shallots - Yum.

    I just made this Butternut Squash Soup. Oh my! It is the BEST and I haven't even put the cinnamon whipped cream or fried shallots on it yet!!!

    I've made a couple different recipes for Butternut Squash soup and this one is definitely my favorite. I have been trying to fathom peoples' "soapy" comments...they must be the same people who don't like cilantro. I found that the orange brought a wonderful...brightness is the only word that I can come up with...to the dish. Absolutely wonderful flavor and everyone loved it!!!

    I have never had butternut squash...OMG The best ever soup! My husband said it was better than any soup we have had in some of the best restaurants in the SF bay area. I changed it up with apple instead of carrot and added a pinch of nutmeg and ginger. THANKS ANN I HEART YOU!

    Absolutely delicious. When you make it, DO NOT omit the cinnamon whipped cream....it takes the soup over the top. This goes in my favorites for sure. I don't taste the "soapy" flavor others are talking about.

    when my husband james jr,in the marines for 6 years.i was in the navy for 10 years.its snowing alot now.when we go to wAlmart we will get butternut squach soup.he will cook that.i cooked everything in the past.i have gone to spain,2 years,italy same time.i told you i broke my right hip and leg.they take great care of me.just type it and i tell jim how to cook anything we want.i want to go to italy again.thanks for all your recipes--------------

    I LOVE Anne and was completely prepared to have my mind blown with this recipe. Sadly, I was not. I read all the reviews prior to making and actually thought to myself....What's going on with ppl saying it had a soapy taste? Did they not rinse their pot? It does, indeed, have what can only be described as a "soapy" flavor in the background. I followed the recipe exactly, which I don't normally do, and it smelled divine until after the addition of the orange, thyme, and Bay leaf. I may still "tinker" with it, perhaps adding the juice but not the orange or omitting the thyme bundle and substituting some different seasoning, but I can't rave over this one. Still loving Anne, though!
