This was fabulous, and very easy to make. I did use only chicken breasts, as that is what we prefer, everything else was according to Anne's recipe. Really tasty, thanks Anne....
And to Cari ~ PLEASE do not rate a recipe one star when you didn't even make the recipe. It is extremely unfair to the Chef, and people reading the review. I will be so happy when the Food Network adds a "report this post" button so these hard working chefs get a proper rating from people that actually made the dish....

    Hello All,
I am a fellow "foody" and one thing I can tell you by personal experience is..some of us use salt to cook and some use very little or none at all. The comment someone posted about Ann's "sodium content" was a bit unecessary as I feel when you cook......YOU are the one to add the salt or not. If you do not want to add "hand fulls" of salt to your simmering onions....then don't . That is Anne's personal option.......it does NOT make or break the recipe.
What matters to me is that she has a HUGE grasp on what is GOOD , arromatic, Fresh, and how to COOK WITH PASSION!
    I love her show.....in fact it's refreshing!
Salt or NO Salt........I take what she teaches and put MY OWN SPIN on it!
In fact, the chicken cacciatore - I did NOT have a thyme bundle, instead used dried time flakes to "taste" and my version was AWESOME!
I LOVE how she explains things and makes you realize that it's HOW you put yourself into the meal that makes THE MEAL!
HATS off to Ann! LOVE watching you cook!
Bring it on!!! can't wait to see more!
And.........by the way, my cacciatore ROCKS!!!!!!!!!!!!!!!!!!

Although being Italian I have my own delicious recipe which is pretty close to this one I thought I would try this. The prep time is off unless you have your own sous chef. I do not agree with just rinsing the mushrooms since they had so much residual dirt left on them so I have to wipe of each one to clean off the dirt. That alone took 5 minutes or more. The whole salt discussion, well, you have to use your own judgement when there are no measurements. I didn;t use a fistful of salt. All in all the dish was very good (mine better :

Since there is so much sauce left I served the chicken over pasta or it would go good over polenta.

The double-dipping thing is pretty bad but that is the least of your worries if you knew all that went on in a restaurant kitchen - five star or not!!

The lady from Elkhart dismissed the double dip criticism as inconsequential. I must disagree with her and who would want to eat in her kitchen when she has such an attitude toward basic cleanliness. Many of the presenters are rather careless in their habits. Paula Deen is one of the worst and, if memory serves, Emeril is the only one who is meticulous whiie cooking.

Anne is the only Food Network Chef that every singe dish I've tried is delicious! This is our new Chicken Cacciatore recipe, it's really wonderful and is a big hit every time I make it. It freezes really well too which is just a fantastic bonus.

I read other reviews and decided to cook it today and serve it tomorrow. It was so good (and I'm my worst critic I can't wait to serve it to my guests. One guest, who happens to be my 93 year old dad, requested no chicken so I used thick cut pork chops and followed the rest of the recipe exactly. I let it simmer longer than required but that was the only deviation. It WAS fun to cook as another reviewer mentioned even if it did take a little time. I'll make this again for my next dinner party.
    so, so good!!!

Made this at the beach for friends and family. Everyone raved about the flavor. But several saw how long it took to make and agreed that the ratio of effort to results was out of balance. If you love chicken cacciatore...go for it. I served it with pasta and the Asparagus, Red Onion and Pecorino salad (wonderful. I salted as I went, to my taste. No problems with saltiness.

Keep 'em comin' Anne and I'll keep cookin' 'em.

Anne, this was a fun dish to make and really good. My husband was sceptical about a new recipe, but as he ate he said "We're having this again." Thank you. You are so animated and fun to watch!
