I saw this episode a few months ago and have been dying to make it! Made it last night for a group of friends and it came out EXCELLENT!! I didn't let the roulades sit for the recommended 1 hr; just didn't have the time, so I cooked them with the toothpicks in place; still came out great! The sauce is a must and really brings all the flavors together. I couldn't find sherry vinegar so I substituted red wine vinegar and it was still delicious! I also didn't have any parsley to add to the stuffing; will see if it makes much difference when I make it again. It took me about 1hr 15min to prepare from start to finish, but it was definitely worth it!!

Wonderful! I also saved the leftover chorizo mixture in the freezer to mix with some potatoes or scrambled eggs. Here's a tip--I realized I was out of eggs & didn't want to go to the store, so I subbed about 1/4 cup buttermilk as a binder in the sausage & the breading. They turned out perfect!

This dish was excellent, especially the sauce, which I would recommend doubling. The dish takes a little time to prepare, but is well worth the effort.

My family loved this dish! My son ate all the leftover full flavored, spicy stuffing before the dish was out of the oven. I will definitely serve it the next time we have company for dinner.

Not bad though I liked the chicken part of it more than the sausage. My husband really enjoyed this dish though.
