I loved this recipe BUT again i did change it up a bit like i always seem to do with my recipes.
I used all the same ingredients, but only half the chicken stolk recommended and probably half the salt she used. I recommend salting the soup at the very end once you have blended the entire thing so you can salt to your liking. I also used 3 bunches of asparagus instead of 2. The soup had great consistency with only half the stock, i think if i would had used the recommended amount it would had ended up super watery and probably would not had liked it as much.
I didnt use goat cheese because i didnt have any, i used a monterey blend which worked well since it melted into the soup. Super good, everyone loved it! I will do again : Great recipe for a cold day.

Just got around to making this soup. Used freshly picked asparagus from our local farm store. Fabulous! Best of all ... no cream ... just veggies. Didn't have goat cheese but honestly it didn't need it. Oh, and as Anne fans know, watch the salt! I love her and her quirky personality but she uses too much salt.

Anne can cook but PLEASE stop saying SO!!!!!!! It is unnerving. She is tough when judging other cooks. She needs to listen to herself.

What is a "bunch" of asparagus? I am lucky enough to get my asparagus from a local farmer. I will never again buy it from the grocery store.

Very disappointed! Was making this for a friend recovering from colon cancer surgery. BTW I LOVE asparagus...but this was simply terrible. I even tried to add extra asparagus since it tasted like nothing..........I love Anne's recipes, but this one really didn't hit the spot.

my boyfriend loves asparagus soup and i made this for him (my first time making asparagus soup and it was a total hit! i cut the recipe in half...i was surprised at how it took no time at all to make this from start to finish. definitely strain it--it brings out the levels of flavors without the texture of the asparagus getting in the way. served it chilled that night, and heated it up as leftovers the next day! AMAZING!

Absolutely fabulous! I have a good time and good food with Anne's recipes. There , I watched,I made,I ate and I reviewed. I did not even notice that she said one word fairly often. I WAS INTERESTED IN HER RECIPE. If you are that fragile you should stick to Little House On The Prairie
