    I served this to my family last night for our Christmas dinner. It was awesome! The pear and chestnut dressing is going to be our dressing of choice from now on! And the pork... Well let's just say even our picky grandkids loved it!

    Wonderful holiday meal. Everyone loved it. The pear and chestnut stuffing was to die for. I also had the butcher prep the roast into a crown. My 10 rib 7.61 lb roast took a total of 3 hrs in the oven.
    Lots of slicing and dicing prep work so do some the day before or make sure you start early enough. Now I want to check out Anne's cookbook.

    Tasted wonderful, but I have to admit and say I cheated a little bit. The butcher crowned the pork for me. It worked well.

    Loved it! Tying was a the difficult part but have decided that since it worked for my family I will cook it for Christmas!! Just placed the order with my butcher...

    First - get an extra set of hands to either hold or tie the roast, doing it yourself usually leads to foul language. One person holds, the other ties. Also, start with a wrap close to the bottom. This will draw it in to the proper shape.

    Next - Buy Anne's book 'Cook like a rock star'! Immediately hit my top 10 cook books....maybe top 5. Lots of the 'Secrets' recipes, but lots more that are actually better than what she has done on the show. I buy a couple of the latest and greatest books every year and almost immediately give them away........not this one.
