I've made these a number of times and they are fantastic!! I like to prep them in the morning to cook that evening so I only use about a 10 hour drink in the brine and they are still soooo flavorful. I also like to add a couple of tablespoons of my homemade jalapeno hot pepper sauce to the brine for some added kick. They're just great!!

Well my husband loved them, to me they were okay. I added red pepper (tobasco flavored season salt to one batch and those were gone. What I can't figure out is how they went soggy after a few hours.

This is easy and unbelievably good. Have tried making homemade chips before - they were ok, but these are over the top. The brining makes all the difference - combo of vinegar, sugar & salt.....amazing. An added benefit....they stayed crispy for a couple of days.

Really AMAZING!!! Perfect amount of vinegar and salt for a perfect tangy and crispy chip. They paired really well with homemade reubens!

Mine turned out too salty. 36 hours of brine could have proven to be too long. On the other hand, reducing the volume of salt may cause improper brining;......maybe no longer than 8 hours might do the trick. I also warmed the slices at 200 in the oven to get them thoroughly dry before frying.

These were yummy! Make sure you double the recipe so you have leftovers. It is a little bit of work, but well worth it. I served these with a honey mustard/chili powder dip-absolutely delicious!!! Bet you just can't eat one.
