I like this easy recipe but made a few alterations based on previous reviews. I cut the vinegar in 1/2 and added some sugar. But after taste testing discovered it was still too be too vinegary and would suggest that it either needs 1 T. of vinegar and the dijon mustard or 2 T. vinegar and no mustard. I think the next batch will be just right!

This is a delicious mayonnaise! I prepared half the recipe, cutting back on the vinegar by 25%. It tastes good, but I think Ann's proportions are better than mine were. Next time: No alterations, and no more commercial mayo for us!

The second time around was a winner! For the first batch I made the recipe as written and the vinegar overwhelmed the mayo. So, I scrapped the first batch and modified the second batch by cutting the vinegar in half, adding about 1/2 tsp sugar, a bit of freshly ground pepper and it came out perfectly. Because I cut the vinegar in half I did add a couple drops of water at the end just to thin it out a bit. Very tasty.

Love this recipe. Very creamy but not heavy. As other reviewers previously commented, I would cut back on the vinegar.Otherwise very easy to make and will make it again. Thanks again Anne for a great, no nonsense recipe.

I had run out of mayo for BLT's - but did have all the ingredients to make my own, so thought I'd give it a try. FANTASTIC and SO much BETTER than store bought mayo!
I used a tad bit more seasoned red wine vinegar, and a little lemon juice, as I like my mayo with a little bite to it.
My only question is, how long will my homemade mayonnaise last for? There is a considerable amount of seasoned red wine vinegar and lemon juice in there...

OK... a failed attempt before wonderful success! I halved the recipe but found I didn't need as much oil so the first pass was humming along great until I tried to polish off the remaining oil and I ended up with a separated mess. Cut the oil down to 1/2 c (1/4 cup less than the halved amount and it went together perfectly. I still had a little left over oil but didn't dare push it. I did use less vinegar based on other reviews but next time I think I'll use more for a bit more tang. So glad I found this! No more store bought for me. BTW, I used a stick mixer.

This was my first attempt at making homemade mayo, I will not go back to the store bought stuff. Of course, I fiddled a bit with the recipe and used rice vinegar, canola oil mixed with a dollop of evoo and added a smidge of sugar to cut the acidity. Wonderful!!!

So yummy! I have made this many times and this is my go to mayo recipe. I use this mayo for salad dressings and for anything that calls for mayo when cooking or just on sandwiches. I do cut the Dijon a little but that I think is personal taste. I've also tried this with olive oil and it whipped up nicely but the olive oil overpowered the fresh taste you get with the lighter oils. It taste best to me with a little Canola but play around with it because you'll soon find out how diverse this little recipe is.

This was a disappointment for me. I followed the recipe exactly and yuck!! I will try making one more time and this time maybe using white vinegar. I was so looking forward to some great mayonnaise and sorry Anne but this recipe was a thumbs down flop for me.

So VERY GOOD! I have always wanted to try making my own mayonnaise and since I had some extra egg yolks from another recipe sitting in the fridge, I tried this one because the directions called for using my food processor. Yay! It turned out perfect and thick and yummy! I did take the advise of some other reviews and cut the vinegar in half(used regular white vinegar and also added about 3/4 tsp sugar. Perfect! I actually had to borrow mayo this morning for my middle school age son's lunch because I was out. Never again! Thanks for an awesome and super easy recipe for the best mayo. Move over Hellmans! : . Update 1/22: I made another batch using red wine vinegar like the recipe says but I still only used 1/8 cup. This made a big difference and it really tasted just like store bought. I kept the rest of my changes the same. Perfect!
