I know how to make traditional flan from scratch, but I found this recipe kind of difficult. The custard was set on top when I pulled it out of the oven after 40 minutes, but it was still jiggly like mayonnaise underneath. So, I put it in the oven longer, but it was still the same after 15 more minutes. Anyhow, I am now chilling the ramekins...so we'll see what happens. The flavor is good though.
