I made these today and I thought they were delicious. I thought they were a slight bit too sweet and thought the coulis slightly overpowered the lemon taste of the pancakes. But the texture was great and the flavors worked well together. I only had a pint of berries (which I thought made plenty and halved the sugar and OJ. Yummy!

Wow, these were really good. I love regular pancakes but it is nice to change it up once in a while. I love lemon but was glad that the lemon was not over powering so that all could enjoy them. The strawberries were great with the pancakes too, I will probably use less oj next time to make the topping a little thicker. I am glad we have leftovers so we can have them again tomorrow morning!

Best pancakes I've ever had! My husband agrees. I can hardly wait to have our kids and grandkids up here to make it for them too. They are great with just powdered sugar and no other topping! Definitely a new family favorite. Thank you Anne!

I would love to be able to try this recipe with meyer lemons unfortunately I couldn't find any and my grocery store advises me they rarely get them in. I used a half cup lemon juice and u couldn't taste the lemon. I should have used zest I think that would have helped. I added a little extra milk and instead I should have put in extra lemon juice. these were good pancakes but not any better than a mix. I will try again but.....if not any better than this time its too much of an expense and not enough payout.

I made them this am and thought they were very good. However I agree with the person that said to cut down on the flour and that they were a little too cake like. This receipe makes lot of pancakes, more for a brunch with more people, will probably cut it in half next time. I also improvised a couple of other things. I used cottage cheese instead of ricotta and run it through the blender first. I have substituted cottage with cheese cake and lasagna it works. Also had blueberries instead of strawberries. They have a nice lemony flavor and then when you dust them with powdered sugar it brings the two flavors together. Husband loved them. I wonder if a person could thin them way down and make crepes. Think I will give that a try next time.
