Mushroom soup just can't get any better than this!! We loved it. You really rocked it Anne!! Fast, easy and delicious!! I left it a bit more "chunky", it was over the top! I so hope you win "The Next Iron Chef"!!!! Good Luck!!

THIS WAS WONDERFUL. YES, PREP TAKES SOME TIME, BUT OPENING A CAN OF SOUP, ALTHOUGH CONSIDERABLY FASTER, WILL NOT COME CLOSE TO YIELDING THIS EARTHY AND CREAMY SOUP. ANNE IS THE BEST TEACHER AND I HOPE SHE IS THE NEXT IRON CHEF!!

Incredible!! Salt and taste it every step of the way - a few pinches at a time -- it's a big pot of soup and you definitely want the finished product to be tasty (it helps if you watch the episode where she makes it. ALSO, I didn't have sherry, so I used a dark bock beer left over from a long-gone six pack and it worked JUST FINE... Ran out of stock at 2 cups, made up the difference with water, no issue at the end... Only had 3 strips of bacon and two little potatoes... Also not problems (like another reviewer, I think the recipe calls for a bit much potato. TRY IT, you'll love it.

Sorry Anne, this soup was surprisingly bland. I kept thinking I had left something out but I followed the recipe exactly except adding some rehydrated porcini and the liquid, and a lot of salt. I wasn't a fan of the potato either, the texture was weird and starchy no matter how much liquid I added to thin it out. Maybe the flavors are supposed to be subtle but I think I'll stick with Ina Garten's cream of wild mushroom soup - much more flavorful and about the same amount of work.

Made this for my husband last nite. He's a very finicky soup eater, esp. since he doesn't particularly enjoy soups. Mushroom is one of his few favorites. He absolutely loved this version. Told me never serve him canned mushroom soup again! He preferred the finished soup without the bacon pieces. I liked it either way. Found the recipe easy to follow and simple to cook. Used white chardonay and red potatoes as I had those on hand. Very, very tasty. A keeper! Thanks Anne!

This recipe is divine! I made it with ordinary mushrooms as I had a lot to use up. I didn't have any sherry so I omitted it and added more cream. OMG!!!!

Soooooooo good! I made this last night for a few friends and my husband and one friend actually used her finger and cleaned the bowl spotless. I will make this again for sure. I knew this was going to be good when the recipe began with cooking the bacon in butter!

Very tasty! I used about 60% mini bellas and 40% wild mushrooms. Also used white wine instead of sherry. Looking forward to left overs tomorrow.
