Boy, these really taste great, but I had a tough time cooking these correctly. Definitely do a test run on these before making for company.
I remember seeing this on the "Worst Cooks" show, and thinking, "what is wrong with these people? Why can't they cook pancakes?" And I am a competent cook...I can bake bread, make pickles, make chutney, can jam, make tortillas, cook many different kinds of meat....but I kept either burning these pancakes, or undercooking them. I tried both my cast iron sideless skillet that I use for tortillas, and a non-stick pan, and neither worked well at cooking these. Either I am having an off day in cooking, or perhaps a large griddle is needed to make these successfully. Even cooking temperature may be more a key with these than pancakes from a mix, maybe? I will try again since they were so yummy, but after I buy a griddle.

Delicious pancakes! I added a tsp of Roasted Cinnamon to the pancakes...went well with the cinnamon syrup, and I also made Brown Sugar Bacon on the side...so good on a rainy day

LOVE EM! I added 1 tsp cinnamon, 1/2 tsp ginger and 2 dashes of nutmeg because I prefer spiced up varieties of pumpkin. Also, I'm at about 4500 ft above sea level and this recipe worked *great* as is in this altitude.

WOW!! Even my picky eater loved these pancakes, and still liked them after I pointed out he was eating vegetables (pumpkin. We had them for dinner, without the bacon on the side, and everyone was quite satisfied. If you served these with bacon and eggs or fruit you could probably feed 6 to 8 people with one batch of pancakes. Next time we make them we're adding chopped pecans to the syrup with the cinnamon sticks. Thank you Anne!

Delicious but, very bland without 2 tsp. cinnamon, 1 tsp nutmeg, and 1 tsp. cloves. Otherwise very good, I just added some flavor and seasonings.

These are not too sweet, and the balance of the orange's acid and sweetness plays with the savory side of the pumpkin. Very fluffy, and I love a pumpkin pancake recipe that doesn't call for loads of allspice.
