I just finished watching this show. The trout looks wonderful & I plan to make this next trip to the mountains with some fresh caught trout.
Regarding the amount of butter for the sauce, Anne used 3 Tablespoons of butter; I'd suggest using unsalted butter so you can adjust the salt to taste.

Food Network recipes frustrate me constantly. There is no where in the recipe where it tells you how much butter to use in the lemon butter sauce at the end. I find this in many recipes where either amounts, ingredients, or steps are left out.
Outside of that, the fish rocked!

I made this for my wife for lunch today. I wasn't too sure about the mustard and oregano on fish, but I was pleasantly surprised and how good it was. My wife said "this is the best fish you have ever made!" I used talapia instead of trout, you can use just about any flakey fish on this one. Defintely a keeper. Serve it for guests and I'm sure you would be talked about for months to come.

this was great i used cod and panko bread crumbs and added a little cheese to the bread crumbs. love all the herbs
i will make this again for family and friends.

what a fun show...I've never tried trout but I am very excited to attempt this recipe...I loved this show from beginning to end..what a sense of humor Anne has, I'll never look at a trout the same way again! cloudy eye and all...I don't think I could eat this dish if I had to look the fish in the eye, but all in all, this show was one of her most entertaining on so many levels...she makes the food sound.....sexy! I think Chef Anne Burrell should do a cooking show like Emmeril Live where there are people sitting in the kitchen watching her cook.
