Not being a cauliflower fan I tried Anne's recipe on fresh sweet onions which I sliced thinly and marinated in her recipe. I did use rice wine vinegar as that was what I had. As suggested I did cut the salt to less than half, which seemed quite adequate. These are delicious, especially on liverwurst sandwhiches. I do not know if I will make it again, but just in caseI have saved the recipe. I did enjoyed it this time.

she has so much salt I could not eat it . wasted my time. she puts to much salt in everthimg she cooks. would not eat at her place..

This is a loser, just way to salty. I love pickled vegetables so pickled a whole head of cauliflower, I took one taste and threw the whole thing out.

Champagne vinegar is very mild and it is a more expensive vinegar no matter where you buy it. Substitute white wine vinegar and/or unseasoned rice vinegar. Works fine. Delicious. Also, 1 to 1 1/2 tablespoons kosher salt is plenty.

Sorry to say, the picked cauliflower didn't make it to the salad. I had the entire thing, which I don't really recommend to do, especially because I added extra hot sauce for spicy deliciousness. They were soooooo addictive!!! Now I'm going through the fridge to see what the heck else I can pickle.

I find the champagne vinegar that is really exensive at the grocery store at none other than Marshalls! for about $6 in Miami, FL. Check out the gourmet foods section next time you go to a TJ Maxx, Ross or Marshalls, you'd be surprised of the nice olive oils and vinegar and spices you'll find!
Another alternative i can think off to the vonegar is tarragon, I bet it goes well with the fennel in the salad.
I have not made this recipe yet, as soon as I do, I'll rate it. Yet knowing Anne, she's going to knock my socks off!
