    This recipe has potential but it was not a real success for me. I think it might have been due to the Purdue game hens I used which come in the plastic bags. I stuck with the recipe but birds gave off so much water during cooking that they were steamed more than browned/grilled.

    I will try this again at some point with Whole Food's air chilled birds. That should improve the results enormously.

    Just made this dish for the first time last night. I've made chicken at least 100 different ways over the years but this recipe is definitely one of the best ones I've ever made!! It deserves a "10". I will be making this again soon! I also rubbed some of the rub under the skin-FANTASTIC!! Just remember to cover it in foil when it's done cooking and let it rest for about 10 minutes-it was soooo juicy! Anne, can't wait till your next cook book comes out-You are amazing & entertaining :

    OMG - never would have thought of a dry rub with spanish paprika and cumin for an overnight marinade but it was fabulous. One of the best chicken dishes, and I don't like chicken ever!

    I loved this recipe - although I changed a couple of things. But all the "how to's" worked perfectly and the result was equally perfect. I used bone-in chicken breasts and exchanged dry mustard for the cumin. It was perfect - - moist, meaty, very nicely browned, and the sauce was a great add-on. I added a pat or two of butter to the sauce at the end prior to serving. This recipe is a "lock" -- easy and great for everyday or special guests. Oh, after oiling the bottom of the smaller pan, I placed a brick from the back yard in the smaller pan as a weight (after wrapping it in foil - again, worked perfectly.

    I made this tonight for my family. It was quick, easy , and finger lickin' good! My 3 year old kept saying "mommy can I have more chicken!" Every time I turned my back, my husband and kids were stealing the herb roasted potatoes from the platter, and pinching off of the hens. Considering that they are picky eaters, this is a great compliment.

    Wow! This is just another one of Anne's great recipes. Her flavor combinations are exquisite and her personallity is pure sunshine. Great easy recipe for prepping ahead for company.
