OMG This needs a gabazillion star ratings! The most fantastic pot roast I have ever made! Hubby doesn't eat most vegetables, but the squash & artichokes were so flavored, I don't think he knew what they were : And the leftovers are super yummy, after letting the flavors marinate together over night! Definitely a keeper. Tonight: Braised Chicken!

This was so delicious. I couldn't find any sunchokes so I just used red potatoes. Everything else I followed exactly. The flavors were great and it was the first time I used Star Anise in a recipe. The Licorice flavor was amazing with the citrus from the orange peel. I can't wait to make this again but I'm getting in shape for the summer so I'll have to wait until fall. Thank you Anne..another delicious recipe from you!

In the words of Anne's dinner guest. Soo yummy. Super yum.
Those words are what made me try this dish in the first place. It is truly delicious. Worth every minute. The meat is so tender and the flavors are so interesting. Every bite is fantastic!
Some changes I made due to product availability and/or reading the recipe wrong
I used frozen artichokes from Wegman's supermarket because I forgot the recipe called for Jerusalem artichokes. I thawed them while the beef cooked.
I used black mission figs.
I sliced the onions ( the recipe here says to slice them but on tv Anne chopped them
I cut the butternut squash larger than the recipe, about 2 inches.
I didn't tie the roast. ( I think I bought a giant chuck steak instead of a roast
My chuck was only 2 1/2 lbs.
This recipe came out great. I had veggies left over and had them for lunch the next day with couscous.

This was FABULOUS! My picky teenager even loved it. I used potatoes and carrots instead of artichokes and squash. And the figs worked great too, even though I think they wouldn't. The orange zest was a nice added flavor. This is a nice dependable meal for the cold winter months! Can't wait to make again!

This was SO easy and delicious! We could not find the sun chokes (Jerusalem Artichokes or Butternut squash at the store. The butternut was completely sold out ... Tis the season :
We substituted diced potatoes and carrots instead for a more traditional taste. Everything else we did the same way (had to adjust the cooking time at the end for the potatoes. It was so good and I can't believe how easy. My first time cooking with figs or even tying with kitchen twine.
We grated some straight horseradish root to sprinkle on at the end and served with parsnip mashed potatoes. Delicious!

Delicious exactly as written. I'm ditching Ina Garten's pot roast for this one! (Added brussel sprouts and a little bit of kale to make it a complete meal with green veggies. Extremely delicious!

Not bad but not amazing, less vinegar, if you watch the video it does not look like that amount. not a fan of figs left them out

I absolutely love Chef Anne, but I was not a fan of this recipe at all. I seriously don't understand why everyone gave it such great reviews. Maybe it's because they didn't actually use all the ingredients in the recipe and changed it up which really isn't rating this recipe, but oh well. haha... First off the vinegar was entirely too strong and secondly, the Jerusalem Artichokes didn't seem to fit in with the flavors. I love them roasted, but the texture and taste did not go with Pot Roast in my opinion. My third issue was the figs. I'm a fig lover, but all the seeds gave the entire dish a grittiness that was incredibly off putting and not something that screams Pot Roast to me. I felt that the recipe had potential even if it was kind of a disaster so I tried making some adjustments. I used red wine instead of red wine vinegar, Rutabagas instead of the Jerusalem Artichokes and simply left out the figs all together. It was better but not fantastic.

Great recipe. I didn't use the squash or the sun chokes (couldn't find them. I just used carrots and other vegetables. My 12 year old actually made this meal all by himself one day when I was running really late. I thought we would have to wait until the next day to cook it but he took it on and we had a wonderful dinner! He is becoming such a good cook! Thanks food network!
