I absolutely love Chef Anne, but I was not a fan of this recipe at all. I seriously don't understand why everyone gave it such great reviews. First off the vinegar was entirely too strong and secondly, the Jerusalem Artichokes didn't seem to fit in with the flavors. I love them roasted, but the texture and taste did not go with Pot Roast in my opinion. My third issue was the figs. I'm a fig lover, but all the seeds gave the entire dish a grittiness that was incredibly off putting and not something that screams Pot Roast to me. I felt that the recipe had potential even if it was kind of a disaster so I tried making some adjustments. I used red wine instead of red wine vinegar, Rutabagas instead of the Jerusalem Artichokes and simply left out the figs all together. It was much better to say the least. Definitely make the Potatoes and Parsnips though. They are yummy!

Fantastic, hubbie loved this one ! I didn`t have butternut squash so i substituted yellow squash I froze this past summer. Just delicious !!!!!!!!!

One of the best dishes I've EVER prepared or eaten. I too couldn't find the Jerusalem chokes so I subbed canned artichoke hearts. Next time I'll try the carrots (or maybe both. Rave reviews from my dinner guests. Thanks Anne

First off, I have never been a fan of pot roast as most of my childhood memories are of dry, flavorless meat. That being said, this is a fantastic recipe! Like most everyone else I had to makes some omissions and substitutions. I left out the star anise and Jerusalem artichokes, and substituted carrots for butternut squash. The meat was moist and tender and the sauce/juices were to die for! I served this with the potato and parsnip puree (also delicious!. My boyfriend ate two LARGE helpings and will probably steal the leftovers. Thanks Anne!

Wonderful recipe Anne! I had to use Chinese Five Spice (1tsp. (no star anise available at my local store. I didn't have figs, so I used prunes, and we could just forget Jerusalem artichokes! Even with my substitutions, it was wonderful! My 10 year old licked the plate and asked for more which usually never happens! I encourage everyone to try this even if you don't like a licorice flavor. It is not pungent, very mild and compliments the other flavorings very well. I hate licorice, but I love this dish. Another fantastic recipe!!!! The star anise, orange peel and figs brought a different, wonderful taste for pot roast. My mom, who doesn't like things cooked differently, even liked the recipe. Anne, your one of my favorite cooks, thankyou for sharing the recipe.

I saw the episode while flying to Florida a couple of weeks ago and couldn't wait to try it. It was worth the wait! "The Big Meat" was tender and very tasty. I think it is the most flavorful pot roast that I have ever had. Definitely a keeper! Thanks Anne.

Just made this as my first pot roast attempt. It was absolutely amazing. I did use carrots instead of sun chokes and actually used a bag of star anise tea. (I saw the picture on the front of the box and didn't realize it was star anise tea until I got home. Everything tasted fine and to potato/parship puree was great, too. Thank you, Anne!

Pretty cool. This is the first time I've ever made pot roast that I like. It is savory and tender and beautifully Fall-looking with the roast veggies. I followed the recipe as exactly as I could, using white wine vinegar (I didn't have red and I omitted the figs (didn't have. It's so pretty that I wish I could post a photo. Thank you Anne!!
